For my first post, I decided to create a cookie. Everyone loves cookies, and they are fast and easy to make. My parent's house is stocked full of all sorts of "healthy" ingredients, so I decided to throw a bunch of it together and make a "healthy" cookie, or somewhat healthy cookie.
What's different about these cookies than other cookies? I used agave nectar, all natural peanut butter, flax seed, and whole wheat flour. Agave nectar is a substitute for sugar, and since the all natural peanut butter has no sugar added, it was a good combination with brown sugar to add a touch of sweetness to the cookies. Flax seed is a perfect substitute for many things, or just a simple addition since it has omega 3s, works as an antioxidant, and has tons of fiber.
So here is the recipe I came up with!
Peanut Butter Oatmeal Flax Chocolate Chip Cookies
1 c. wheat flour
½ c. oatmeal
¼ c. flaxseed
1 t. baking soda
½ t. sea salt
¼ c. all natural peanut butter
¼ c. butter
1/3 c. brown sugar
1/3 c. agave nectar
1 egg
1 t. vanilla
¾ c. chocolate chips
Preheat oven to 350 degrees.
Cream together butter, peanut butter, agave nectar, and brown sugar.
Add egg and vanilla.
Add dry ingredients and mix together.
Add chocolate chips.
Drop onto cookie sheet and bake for 8 -10 minutes.
